1 | Slice loin of pork into a thin sheet. |
2 | Sprinkle with salt and pepper. |
3 | Place avocado flesh onto the pork together with prune. |
4 | Roll up and tie with string. |
5 | Roast loin of pork in oven at 200ºC for 40 minutes or until cooked. |
6 | Boil red wine sauce and pour in cream and cook for 2 minutes. Turn down the heat and add butter slowly, mix well. |
7 | Slice pork roll and place onto plate and pour over the sauce. Ready to serve. |
