Remove pith of bitter gourd, slice, rinse and place on a sieve; marinate with 1/2 tbsp coarse salt for about 10-15 min, rinse under tap water to reduce bitter taste. Drain thoroughly. Set aside.

Dried Chinese mushrooms soaked till soft, stems removed; season with a little salt, cornstarch, sugar and sesame oil; steam until cooked; let cool; trim along side of mushroom to form a long strip, cut into lengths,coat each length with cornstarch, deep-fry in hot oil till crispy.

Red chillies sliced. Onion cut into pieces. Ginger gently pounded. Set aside. Rinse fermented black beans for a while, stir in 1 tsp oil, mash to form a paste.

Sauté ginger till fragrant and discard; sauté red chillies and mashed fermented black beans till fragrant; add and sauté bitter gourd for a while; sprinkle pinch of salt, sugar and pepper, stir-fry till fully cooked and well flavoured. Add a little water if needed. Add onion, keep stir-frying while adding sauce gradually. Finally add deep-fried mushrooms, mix well and serve. |
