1 | Rub chicken skin with salt, remove lung, wash and drain. Use 2 tbsp salt to rub chicken thoroughly, and marinate overnight. Chop into pieces, and set aside. |
2 | Peel gingko seed, and slightly press. |
3 | Wash rice, and drain. |
4 | Pour water into pot, add in dried bean curd sheet and boil until dissolved. |
5 | Add in chopped gingko seed and rice. |
6 | Boil over low heat for 2 hours. |
7 | Add chicken pieces into cooked congee, boil for another 15 minutes, and serve. |
