Wash tomato, make a cross cut on the skin at the bottom, put in boiling water for 1 to 2 minutes, remove skin and chop.

Beat eggs with 1 teaspoon of oil and 1/4 teaspoon of salt added.

Cook noodles, drain and put into a bowl.

Boil chicken broth and pour on top of noodles.

Heat 1 tablespoon of oil in the wok, stir-fry ginger, and add tomato, sugar and 1/4 teaspoon of salt. Cook for about 1 minute and remove from wok.

In a clean wok, heat 1 tablespoon of oil to medium high temperature(about 170°C), turn off heat, put in beaten eggs and stir gently until 80% cooked. Stir in tomato. Put egg and tomato on top of noodles |
