1 | Wash all the ingredients. |
2 | Cut fresh duck gizzard, remove the internal organs, wash them with coarse salt and rinse. Soak the dried duck gizzard. |
3 | Soak the dried tangerine peel until soft, remove the white fibre. |
4 | Boil the water in the pot, put half of the watercress and other ingredients in, boil for ½ hour and then boil over low heat for 1 hour, put the rest of the watercress and boil for 10 minutes. Season with salt and serve. |
