Wash dried shrimps, pork and bamboo shoots and dice finely. Mix pork with a little bean flour. Wash sweet preserved turnip and dice. Remove stalks from mushrooms, wash, soak until soft and dice finely.

Place all ingredients in wok, add light soya sauce, sugar and oyster sauce. Fry briefly before adding Shaoxing wine and a little stock. Thicken with starch solution and dish.

Place flour and glutinous rice flour in bowl. Gradually pour in boiling water, mixing with wooden rolling pin at the same time. Stir until a dough is formed. Remove from bowl and place on table top. Knead until it is of the right consistency.

Take small pieces of dough and press flat with hands.

Place 1 teaspoon of filling in centre of each. Seal to form triangle shapes. Deep fry in hot oil until golden brown. Drain and serve. |
