Remove stalks from green pepper and cut into halves. Remove seeds, wash and drain well. Use 50% fatty pork, wash and mince. Add a little salt, mix well and set aside.

Soak dried shrimps until soft and wash. Cut tops and roots from spring onion, using only the white parts. Cut into small pieces.

Break eggs into bowl and mix with minced pork, spring onion and dried shrimps. Season with sesame oil, white sugar and pepper. Mix to form filling.

Coat inside of green pepper with a little starch. Place filling inside pepper until full.

Heat wok and when hot add suitable amount of oil. Place peppers, filling side down in oil and swallow fry until the meat filling is golden brown. Remove peppers from wok, drain off all oil and return oil in wok back to container.

Heat wok again and minced garlic and preserved black beans. Next put in water and salt and the fried green peppers. Bring to the boil and thicken with starch solution. Dish and serve. |
