Mix the seasonings. Set aside.

Wash the pork belly. Drain and dry. Blast the skin with brush-on glaze. Turn over the meat and have a few cuts between bones. Blast with seasonings and marinate for 2 hours.

Thread the meat with steel skewers into a square field shape. Roast the meat in preheated oven at 200˚C for 10 minutes. When the pork skin looks red, remove from oven. Prick on the skin with steel needle and leave to cool.

Preheat the oven. Roast the meat in the oven at 200˚C for 8 minutes. Remove the meat from oven. Prick on the skin and roast for 15- 20 minutes at 280˚C. When oil sweats on the burnt skin, cover the meat with an aluminum sheet. Roast again for 25-30 minutes at 120˚C. Remove from oven.

Before serving, scrap away any burnt on the skin. |
