Rinse chicken wings well and drain. Marinate for 30 minutes.

Heat wok with oil, fry chicken wings until golden, dish up and drain excess oil.

Wash Chinese celery well, cut into sections. Wash red pepper and onion well, cut into dice.

Bring water to a boil, add in preserved prunes, sour plums and half of the red pepper dice. Cover and cook until the fragrance of preserved prunes come out. Dish up and set aside.

Heat wok with oil, stir-fry ginger and onion until fragrant. Add in preserved prune sauce and rock sugar, put in chicken wings and cook for a while. Add in Chinese celery, red pepper and seasonings, stir well and serve. |
